Al pastor recipes vary from region to region but the essentials are dried, smoky chilies, spices like achiote, cumin and oregano, and pineapple. Sometimes onion and pineapple is layered on the rotisserie in between layers of marinated pork. This dish is, in my opinion, the absolute pinnacle of fusion cuisine. The amazing fusion of Mediterranean and Mexican is unbeatable in flavor and texture. Al Pastor was invented by Lebanese immigrants who adapted the vertical grilling technique used in doner kebab and shawarma to the ingredients and spices of Mexico. The result is some of the best food the world has ever seen.


Servings :



2 whole Ancho or Pasilla Chilies dried, stems and seeds removed

2 whole Guajillo Chilies dried, stems and seeds removed

1 Chipotle Chile in Adobo plus 1 tablespoon of the adobo sauce from the can

1 tablespoon Achiote Paste or Powder

1 teaspoon Mexican Oregano dried

1 1/2 teaspoons Cumin Seed ground

3 teaspoons Sea Salt

3 whole Garlic Cloves

1/4 cup Apple Cider Vinegar

3/4 cup Chicken Stock low-sodium or homemade, preferably

2 tablespoon Olive or Vegetable Oil

32-48 Small Corn Tortillas heated and kept warm

1 Medium White Onion finely diced

1/2 cup Cilantro finely minced with large stems remove

2-3 Limes cut into wedges

Salsa or Hot Sauce (optional)

1.5-2 pounds Pork Loin or Tenderloin boneless and thinly-sliced

8 ounces Smoked Bacon

1 Medium White Onion thinly-sliced

1/2 Pineapple peeled, cored and thinly sliced
