| Steps | 1. Roast Eggplant in Oven |
| 2. Cook Onions in oil starting with cumin seed & cinamon sticks | |
| 3. When onions are golden add spices. | |
| 4. Simmer 20 minutes. | |
| 5. When Eggplant is done, peel skin. | |
| 6. Combine eggplant and cook on low heat for 30-60 minutes | |
| Notes | Keeps well. Goes well with chicken. |
