An incredibly tasty dish served as a main course or as a buffet item. This recipe comes from the owner who relished the smells and flavors in the recounting of how the dish is made.

Serves 4
Ingredients

Eggplant
Cumin seed
Cinnamon sticks
Onions
Soy Oil
Coriander
Tamarind
Paprika
Cayene Pepper

Steps 1. Roast Eggplant in Oven
2. Cook Onions in oil starting with cumin seed & cinamon sticks
3. When onions are golden add spices.
4. Simmer 20 minutes.
5. When Eggplant is done, peel skin.
6. Combine eggplant and cook on low heat for 30-60 minutes
Notes Keeps well. Goes well with chicken.
