On the West coast of the US, the Pacific Ocean provides not only abundant sea life, but also a sunny climate for extremely steady farming. The continued source of Salmon and Crab have led to great cooking styles for the Pacific Northwest. If you are in the mood for things ocean - perhaps one of the greatest offerings is Hawaiian cuisine - though the secret to the Hawaiian kitchen is absolutely fresh fish caught within hours.

The ability to grow crops in fairly good soil without inclement seasonal weather is somewhat unique to this part of the US. This not only has strengthened the California agricultural economy, it has also led to a style of Cuisine called "California Cuisine", pioneered by Alice Waters at Chez Panisse in Berkeley California in the 1980's. One of the hallmarks is the use of fresh local vegetables. Many of the larger cites within the Pacific Region feature California Cuisine.
